I could of also added lamb or pork chops to the poll as well. It's also possible, other settlements outside of Atlas and Mantle, people may know how to ice fish. However, it's highly likely Atlas had their fish imported. But if I had to say what James' favorite meal was, it was probably a steak topped with sauteed mushrooms, a baked potato on the side, and a glass of scotch.
Upon learning that plant Dust was a thing, it occurred to me that, in theory, plant, earth, fire, and water Dust could be used to create a climate controlled garden. Shove that system into a giant green house with uv lights, and you don't need to worry whether the location is naturally suitable for farming.
Mind you, this is theoretical, and it would be very expensive. It would probably cost more than just importing food from good farm land, but if food imports aren't cutting it, this might be the difference between losing pounds and losing people.
Fishing is one of the things I assumed they didn't need to look to imports for beyond variety... depending on how active the deep Grimm are. It would be more realistic than ice fishing. Deep water fishing on an industrial scale should be able to get good hauls within the Kingdom's naval borders and nearby international waters.
The bulk of the Tundra is over ground. It's not some thin layer of ice that Joe Schmoe can drill through with an off the shelf tool. IRL you can't just whip out a drill and ice fish anywhere inland in Antarctica. You'll only be able to do that on the coasts close to the waterline. Ice fishing is not viable for more than the odd home caught meal. Additionally, the Grimm in the Tundra won't be able to reach the boats without wings or amphibious capability, Because tundra is ground.
I'm thinking protein, obviously, but also somewhat complex and flavorful. Meat of some kind, but vegetables with it, which is why I went with the steak. I imagine he would enjoy a good wine on a fancy night. White, I think. That rules out things like asparagus or sprouts, which don't pair well. Steak, medium rare, with some roasted or steamed artichokes, and mashed potatoes with light gravy, paired with a vintage wine like Malbec or Chanin Blanc. Of course, the altitude of Atlas would affect the wine yield, so it would be a hot commodity. As such, it may be temporarily unavailable, in which case I would substitute with cranberry juice mixed with Ginger Ale.
Before V8, I could see him making do for speed or convenience. Running himself ragged. Also a guy who wouldn't be above eating MREs in a pinch despite his rank.
Now I need to see an image of Ironwood cracking open a can of Vale-Dry Cranberry Ginger Ale.
Ironwood comes with a beer can and glass bottle opener and screwdriver attachment in his arm. xD

Clover would likely eat a regular cheeseburger.
Marrow and Elm would definitely eat bacon burgers.
Harriet and Vine would likely eat veggieburgers.
Or a better scenario would be:
Clover is eating a cheeseburger with ketchup, lettuce, tomatoes, and onions.
Marrow's is the same but with bacon.
Elm, however, is stuffing herself with either a mountain of bacon burgers or one as tall as a skyscraper.
Then of course, Harriet and Vine are eating veggieburgers. With Harriet scarfing her's down, and Vine calmly taking his time.
Harriet and Vine being vegetarian makes perfect sense. :D That would be such a nice scene. Similar to how Blake drinks tea while Weiss drinks coffee. It's a small detail, but it makes characters feel more real. Elm eating a mountain of food is accurate too.
Hell, I'd go so far to think Vine was vegan. And of course, with Harriet eating her food quickly is a callback to her treating everything like a competition.
